We add roller-dried milk powder to our dark milk chocolate. The method of roller drying milk utilizes heated rollers, which creates a unique caramelized flavor that Gunars has described as similar to creme brûlée. Our dark milk chocolate contains 60% cacao (compared to the 65% cacao in most of our the dark chocolate), and still has a robust base cocoa flavor, making it a wonderful alternative to regular milk chocolate.
